French Fat Baster
An almost forgotten technique, we built the first Fat Baster at the request of Phillip Frankland Lee for the opening of his restaurant in Montecito, CA.
Place this item into embers until red hot. To use, drop a strip of salt pork or other fat into the large side of the cone, and drizzle the melted, sometimes flaming fat over the item you want to flavor. Use the necessary safety precautions, and consult your cardiologist as well.
