The Dual-Zone Rear-Fired Masonry Insert
The NorCal Ovenworks Base Unit #9931 is the ultimate logistical station for the masonry outdoor kitchen. This unit combines two distinct technologies: a Rear Ember System that creates a continuous backdrop of fire, and Split Independent Grates that allow for asynchronous cooking services.
Unlike side-brasero units that consume lateral counter width, the Rear Brasero utilizes the depth of the firebox to generate embers. This allows the chef to pull coals forward from the rear wall to feed two independent temperature zones. Capable of searing on the left while slow-roasting on the right, this drop-in unit provides total thermal control in a unified architectural insert.

Fabrication Specifications
1. Rear Brasero Architecture
The fire basket extends across the rear wall of the firebox.
-
Workflow: Logs burn in the back, creating a radiant "thermal wall." Sterile embers drop to the floor and are pulled forward under the grates.
-
Advantage: Keeps the active cooking area free of unburnt logs and heavy smoke.
2. Dual-Zone Independent Control
The unit features Two Independent Side-Mounted Flywheels.
-
Asynchronous Elevation: Total separation of cooking logic. You can drop Zone A flush with the coals for high-heat searing while keeping Zone B elevated for resting or warming.
3. Argentine V-Grate Technology
Equipped with our signature V-Grate Surface on both sides. These channels capture rendering fats and funnel them into dual detachable Drip Pans.
-
Function: Eliminates flare-ups and prevents grease from splashing onto your masonry surround.
