The Dual-Zone Masonry Insert

The NorCal Ovenworks Base Unit #BISPAR is the architectural standard for multi-zone wood-fired or charcoal cooking. Designed for permanent installation into custom masonry islands, this unit features a "Split" architecture that provides two completely independent grilling stations within a single thermal envelope.

Engineered for the chef who needs to multitask, the #BISPAR allows for asynchronous elevation. You can drop the left grate flush with the coals for high-heat searing while keeping the right grate elevated for slow roasting. Equipped with a heavy-duty structural flange, this unit drops seamlessly into stone, stucco, or brick enclosures, providing the clean, flush-mount finish required by high-end design specifications.


STANDARD ISSUE: The Asado Maintenance Kit

We don't send our grills out unprepared.

Proper operation of an Argentine system requires specific tooling. We include the essential maintenance tools as standard equipment. The material of your tool set will automatically match the grill material you select.

  • If you configure Black Steel:

    Includes the Black Steel Shovel, T-Rake & V-Grate Cleaner ($432 Value).1

  • If you configure Stainless Steel:

    Includes the 304-Stainless Shovel, T-Rake & V-Grate Cleaner ($802 Value).

The Kit Loadout:

  1. The Shovel: For rapid ash removal and ember transfer between zones.

  2. The T-Rake: For precise coal bed leveling.

  3. The V-Grate Cleaner: Custom-profiled to scour the V-channels.


Fabrication Specifications

1. Dual-Zone Independent Control

The #BISPAR features Two Independent Side-Mounted Flywheels.

  • Function: Total separation of cooking logic. Manage a steak service on one side and a vegetable service on the other without thermal conflict.

2. Structural Flange Options

  • Standard (Open Front): A 3-Sided Flange allows the firebox floor to be flush with your hearth, granting easy access to the fire for raking and cleaning.

  • Optional (Closed Front): A 4-Sided Flange creates a "Window" effect, fully enclosing the firebox within the masonry for a sleek, modern look and improved wind protection.

3. Argentine V-Grate Technology

Equipped with our signature V-Grate Surface on both sides. These channels capture rendering fats and funnel them into dual detachable Drip Pans.

  • Result: A cleaner fire, reduced flare-ups, and the protection of your masonry stonework from grease splatter.

4. Fully Welded Containment

  • Depth: 12" Standard Depth.

  • Construction: Fully seam-welded firebox. This prevents ash scatter and protects the internal structure of your outdoor kitchen from heat damage.


Material Configurations (Select One)

Option A: A36 Black Steel (The Traditionalist)

  • Spec: 3/16" Heavy-Gauge Carbon Steel body.

  • Finish: High-heat industrial black.

  • Grates: Stainless Steel grilling surface included.

  • Note: To preserve the Firebox, line the firebox with split firebricks (not included).

Option B: 304 Stainless Steel (The Commercial/Coastal)

  • Spec: 3/16" Heavy-Gauge 304 Stainless Steel body.

  • Finish: Non-polished "Industrial" finish.

  • Resistance: Rust resistant.
