The Rear Wood-Fired Mobile Workstation

The NorCal Ovenworks Base Unit #9971 is a high-performance, mobile solution for wood-fired cooking. Unlike standard layouts, this unit utilizes a Rear Ember System. This design maximizes lateral cooking space by positioning the firewood basket along the back wall of the firebox, creating a continuous backdrop of radiant heat.

The workflow is linear and efficient: Burn logs in the rear basket, then pull embers forward under the grill grate as needed. Mounted on a heavy-duty industrial chassis with locking casters, this unit brings the capability of a fixed masonry hearth to any location on your patio or commercial line.


STANDARD ISSUE: The Asado Maintenance Kit

Matched Tooling Included.

We do not send our grills out unprepared. We include the essential maintenance tools as standard equipment. The material of your tool set will automatically match the grill material you select.

  • If you configure Black Steel:

    Includes the Black Steel Shovel, T-Rake & V-Grate Cleaner ($432 Value).

  • If you configure Stainless Steel:

    Includes the 304-Stainless Shovel, T-Rake & V-Grate Cleaner ($802 Value).

The Kit Loadout:

  1. The Shovel: Essential for pulling live embers from the rear basket forward to the cooking zone.

  2. The T-Rake: For precise coal bed leveling.

  3. The V-Grate Cleaner: Custom-Used to clean out the grease.


Fabrication Specifications

1. Rear Brasero Architecture

The fire basket is positioned across the entire back wall of the firebox.

  • Thermal Dynamics: Provides consistent radiant heat from the rear, perfect for slow-roasting meats on the elevated grate setting.

  • Ember Production: Allows for a continuous burn cycle separate from the food source.

2. Mobile Industrial Chassis

The firebox is mounted on a reinforced steel frame with Heavy-Duty Locking Casters. This ensures the unit offers the stability of a stationary kitchen while allowing relocation for event flow or cleaning.

3. Argentine V-Grate Technology

Equipped with our V-Grate Surface. These channels capture rendering fats and funnel them into a detachable Drip Pan.

  • Function: Eliminates flare-ups and prevents grease fires, ensuring the flavor profile remains pure. (Round Rod Grates available upon request).

4. Variable Height Flywheel

The side-mounted flywheel provides micrometer-level control over your cooking temperature.

  • Control: Raise the grate to slow-roast using ambient heat or lower it flush with the ember bed for searing.

  • (Note: Larger units can be configured with Split Independent Grates for dual-zone control).

Option A: A36 Black Steel (The Traditionalist)

  • Spec: 3/16" Heavy-Gauge Carbon Steel body.

  • Finish: High-heat industrial black.

  • Grates: Stainless Steel grilling surface included.

  • Note: Lining with split firebricks (not included) will help preserve the steel firebox.

Option B: 304 Stainless Steel (The Commercial/Coastal)

  • Spec: 3/16" Heavy-Gauge 304 Stainless Steel body.

  • Finish: Non-polished "Industrial" finish.

  • Resistance: Rust-resistant. Advisable for coastal estates. 

  • Note: Lining with split firebricks (not included) will help preserve the steel firebox.
