The Rear-Fired Masonry Insert

The NorCal Ovenworks Base Unit #9921 is a specialized architectural solution for wood-fired cooking. Unlike side-brasero units that require significant lateral counter space, this unit utilizes a Rear Ember System. This design creates a continuous "Wall of Fire" along the back of the firebox, maximizing the visual impact for open kitchens while optimizing lateral counter space.

The workflow is linear: Log fuel burns in the rear basket, and embers are pulled forward under the grill grate as needed. Available in both A36 Black Steel and 304 Stainless Steel, this unit features a heavy-duty structural flange for seamless integration into custom stone, stucco, or brick islands.

We do not send our grills out unprepared. We include the essential maintenance tools as standard equipment. The material of your tool set will automatically match the grill material you select.

  • If you configure Black Steel:

    Includes the Black Steel Shovel, T-Rake & V-Grate Cleaner ($432 Value).

  • If you configure Stainless Steel:

    Includes the 304-Stainless Shovel, T-Rake & V-Grate Cleaner ($802 Value).

The Kit Loadout:

  1. The Shovel: Essential for pulling live embers from the rear basket forward to the cooking zone.

  2. The T-Rake: For precise coal bed leveling.

  3. The V-Grate Cleaner: Custom-profiled to scour the V-channels for sanitary grease flow.


Fabrication Specifications

1. Rear Brasero Architecture

The fire basket is positioned across the entire back wall of the firebox.

  • Thermal Dynamics: Provides consistent radiant heat from the rear, perfect for slow-roasting meats on the elevated grate setting.

  • Space Efficiency: ideal for islands where width is limited, but depth is available.

2. Grate Logic (Single vs. Split)

  • Single Zone (36" - 42"): A single flywheel controls the entire surface.

  • Dual Zone Split (48" - 72"): Larger units can be configured as Split Models with two independent flywheels, allowing you to sear on one side while resting on the other. (Note: 72" Model is Split Only).

3. Argentine V-Grate Technology

Equipped with our signature V-Grate Surface. These channels capture rendering fats and funnel them into a detachable Drip Pan.

  • Function: Eliminates flare-ups and prevents grease from splashing onto your masonry surround.

4. Material Configurations (Select One)

Option A: A36 Black Steel (The Traditionalist)

  • Spec: 3/16" Heavy-Gauge Carbon Steel body.

  • Finish: High-heat industrial black.

  • Grates: Stainless Steel grilling surface included.

  • Note: Recommend: Line the firebox with split firebricks (not included) to preserve the steel.

Option B: 304 Stainless Steel (The Commercial/Coastal)

  • Spec: 3/16" Heavy-Gauge 304 Stainless Steel body.

  • Finish: Non-polished "Industrial" finish.

  • Resistance: Rust-resistant. Recommended for coastal estates.

  • Note: Recommend: Line the firebox with split firebricks (not included) to preserve the steel.

Critical Data for Contractors: The "Cutout Dimension" is the clear space required in your island.
