What is a Trompo? Trompo is a popular Mexican cooking tool and technique where marinated meat, typically pork, is slowly roasted on a vertical spit, similar to Middle Eastern shawarma. The meat is shaved off the trompo or spit and served in tacos or other Mexican dishes. This technique was brought to Mexico by Lebanese immigrants who modified their shawarma recipe by adding Mexican spices such as dried chilies, pineapple, and garlic. Tacos al pastor, or tacos from the shepherd, are the famous street food prepared with trompo roasting, and are a beloved food in Mexico and beyond.
